Tips

The custard filling will keep, covered, in the refrigerator for up to 5 days. The key is to cool the custard very quickly after cooking it. Use seasonal fruit as an alternative filling – blueberries and strawberries are very good, too.

Chocolate Pithiviers

This was the signature dessert of Bibendum restaurant back in the day. I worked here as a pastry chef in 1992 and it was my introduction to the cooking scene of London in the nineties. The kitchen was electric. One of my first jobs was to make the chocolate pithiviers and I’m going to share this with you now. In my mind, this is an infinitely better dessert than its successor, the chocolate fondant. The reason it is so special is that it has a melting gooey centre that is wrapped up in buttery flaky pastry. This combination of flavours is like nothing I’ve ever eaten in my life. It has to be cooked to order and eaten right away with lashings of extra-thick Jersey cream.
